Breakfast Casserole

Another delish meal to get your day started, and a great meal prep idea. Preheat oven to 350, and saute your choice of veggies (I added diced chicken breast to my veggies) in choice of seasonings.
Crack at least 6 large eggs into a nonstick pan, add sautéed mixing, a little bit of non-dairy milk of choice, and stir. Top with your choice of shredded cheese and bake uncovered for between 25 - 30 minutes. Let cool and cut into your desired size of portions.
